  • 15 oz canned chickpeas (drained and rinsed)
  • 2 large red bell peppers (or 1 jar roasted red peppers, drained)
  • 1/2 cup tahini
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic (minced)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt (or to taste)
  • 34 tablespoons ice water

Instructions

  1. If using fresh peppers, broil them until charred on all sides. Place them in a bowl covered to steam for 15 minutes. Peel off the skins once cooled.
  2. In a food processor, blend tahini and lemon juice for 1 minute until creamy.
  3. Add minced garlic, cumin, salt, smoked paprika, and ice water; blend again until smooth.
  4. For ultra-smooth texture, optionally peel chickpeas before blending.
  5. Combine chickpeas and roasted peppers in the processor with olive oil; blend for 3-5 minutes until exceptionally smooth. Add more ice water if needed.
  6. Serve garnished with olive oil and paprika.
