  • 1/2 cup fresh orange juice
  • 1/3 cup fresh lime juice
  • 4 garlic cloves (minced)
  • 23 pounds skirt steak
  • 1 cup fresh parsley
  • 1 cup fresh cilantro
  • 1/4 cup onion (diced)
  • 3 tablespoons fresh lime juice
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. In a mixing bowl, combine olive oil, orange juice, lime juice, minced garlic, salt, and pepper. Whisk until blended.
  2. Place skirt steak in a resealable bag or shallow dish; pour marinade over the steak, seal or cover tightly, and refrigerate for at least 6 hours or overnight.
  3. Prepare the chimichurri by blending parsley, cilantro, olive oil, diced onion, garlic cloves, lime juice, apple cider vinegar, salt, and optional red pepper flakes until chunky.
  4. Preheat grill to medium-high heat. Remove steak from marinade and discard excess liquid. Grill for 4-5 minutes on each side until desired doneness.
  5. Let the steak rest for 5 minutes before slicing against the grain. Serve topped with chimichurri sauce.
