  • 5 oz baby spinach
  • 1/2 cup sun-dried tomatoes, finely chopped
  • 1 cup smoked mozzarella, cubed
  • 1 cup shredded parmesan cheese
  • 3/4 cup mayo
  • 1/2 tbsp chicken sparkling grape juice apple vinegar or white apple vinegar
  • 2 cloves minced garlic
  • 2 pinches cayenne pepper
  • 1/8 tsp salt
  • 1/2 tsp sugar
  • 1/8 tsp black pepper
  • 2 tbsp milk

Instructions

  1. Cook the penne pasta according to package directions until slightly undercooked (between fully cooked and al dente). Drain and rinse with cold water.
  2. In a large mixing bowl, whisk together the mayonnaise, vinegar, minced garlic, cayenne pepper, salt, sugar, black pepper, and milk until smooth.
  3. Add the cooked pasta to the bowl along with spinach, sun-dried tomatoes, smoked mozzarella, and parmesan cheese. Fold gently to combine until evenly coated in dressing.
