  • 1 1/2 pounds ground beef (about 88% lean)
  • 1 chipotle pepper (seeded and minced)
  • 2 teaspoons adobo sauce
  • 1/4 cup cilantro (chopped)
  • Salt and pepper to taste
  • 2 large rings of pineapple
  • 8 slider buns
  • Chipotle mayonnaise

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a medium bowl, mix together ground beef, minced chipotle pepper, adobo sauce, chopped cilantro, salt, and black pepper until well combined. Form into eight equal patties.
  3. Grill pineapple rings for about 2-3 minutes per side until grill marks appear; cut into quarters.
  4. Prepare chipotle mayonnaise by mixing desired ingredients.
  5. Toast slider buns on the grill until lightly golden.
  6. Grill patties for approximately 5 minutes per side or until cooked through; a little pink inside is recommended for juiciness.
  7. Assemble each slider by placing a patty on the bottom bun, topping with grilled pineapple and chipotle mayo before capping with the top bun.
