  • 1 cup mini vegan marshmallows (for filling)

  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Melt the butter in a large saucepan over medium-low heat. Add the mini vegan marshmallows and stir until smooth.
  2. Remove from heat and fold in the crispy rice cereal and crushed graham crackers until evenly coated.
  3. Transfer the mixture onto greased parchment paper; press down into a ½-inch thick rectangle.
  4. Spread the chocolate layer evenly on top and sprinkle remaining mini vegan marshmallows.
  5. Carefully roll from one long edge using parchment to guide you; chill for 30–45 minutes until firm.
  6. Melt chocolate chips with coconut oil; drizzle over chilled log and slice into rounds.
