  • ¼ cup cane sugar
  • 1 large egg (or flax egg for vegan option)
  • ½ cup all-purpose flour
  • ½ cup oat flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 pound strawberries (small diced)
  • 2 tablespoons cane sugar
  • 1 tablespoon lemon juice
  • ¼ cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine diced strawberries with cane sugar and lemon juice. Set aside.
  3. In another bowl, whisk together melted coconut oil, cane sugar, and egg until smooth. Gradually mix in all-purpose flour, oat flour, cinnamon, and salt until well combined.
  4. Spread half of the base mixture into an 8×8 inch baking dish. Layer the strawberry filling evenly over it, then crumble the remaining base mixture on top.
  5. Bake for about 45 minutes or until golden brown. Let cool completely before cutting into squares.
