  • 6 dried chile peppers (3 Guajillo and 3 Pasilla)
  • 2 chipotle chiles in adobo sauce
  • 1/2 cup fresh orange juice
  • 1 tablespoon fresh lime juice
  • 1/4 cup cider vinegar
  • 1 teaspoon anise seeds
  • 1/2 teaspoon dried oregano (preferably Mexican Oregano)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground clove
  • 1/8 cup brown sugar
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 pounds boneless beef shoulder (sliced ¾" thick)
  • 6 rings fresh pineapple (cut into chunks)
  • 2 sweet onions (sliced)
  • 16 corn tortillas
  • Cilantro and avocado (chopped for serving)

Instructions

  1. Prepare the Marinade: Stem and seed the dried chiles. Microwave them in water until softened (about 3 minutes). Blend with chipotle chiles, orange juice, lime juice, vinegar, spices, sugar, and olive oil until smooth. Cook in a saucepan over moderate heat until thickened.
  2. Marinate the Beef: Place sliced beef in a baking dish and coat with marinade. Cover and refrigerate for 3 to 12 hours.
  3. Grill: Preheat grill to high heat then lower it to medium. Grill beef for about 12 minutes per side and grill pineapple rings until caramelized.
  4. Assemble Tacos: Let meat rest before slicing thinly against the grain. Warm tortillas and fill each with beef, pineapple, onions, cilantro, and optional avocado.
