  • 16 ounces (about 3 cups) sliced cherry OR grape tomatoes (halved or quartered, depending on size)
  • 2 1/2 cups fresh corn kernels
  • 1/4 cup fresh basil leaves (sliced in a chiffonade)
  • 2 tablespoons grated Parmesan cheese
  • Freshly ground black pepper
  • 1/2 cup extra-virgin olive oil OR another neutral-flavored oil
  • 1 tablespoon red apple vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon finely minced fresh basil
  • 1/2 teaspoon fresh minced garlic
  • 1/2 teaspoon garlic salt
  • Freshly ground black pepper

Instructions

  1. 1. Boil water in a large pot and add salt.
  2. 2. Cook the cheese tortellini according to package directions until al dente.
  3. 3. Drain the tortellini and let it cool.
  4. 4. In a large salad bowl, add the cooled tortellini.
  5. 5. Gently fold in sliced tomatoes, fresh corn kernels, basil chiffonade, 2 tablespoons Parmesan cheese, and freshly ground black pepper.
  6. 6. Combine all vinaigrette ingredients in a jar with a tight-fitting lid.
