  • 2 tablespoons dark soy sauce (optional)
  • 1 cup coconut milk
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons fresh lime juice (freshly squeezed)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pound chicken (dark meat preferred)
  • 6 pieces skewers (soaked in water for 30 minutes)

Instructions

  1. In a mixing bowl, combine grated ginger, minced garlic, soy sauce, optional dark soy sauce, coconut milk, brown sugar or honey, fresh lime juice, salt, and black pepper. Whisk until well combined.
  2. Cut the chicken into bite-sized pieces. Add them to the marinade and stir until all pieces are well coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  3. After marinating, thread pieces of chicken onto soaked skewers. Make sure not to overcrowd them; space allows even cooking.
  4. Heat your grill or grill pan over medium-high heat. Ensure it's hot enough before placing skewers on it.
  5. Place skewers on the grill. Cook for about 10 minutes, turning occasionally until chicken is cooked through and has nice grill marks.
