  • 2 cups cooked chicken, diced
  • 1 (14 oz) can pineapple tidbits, drained (reserve juice)
  • 8 oz rotini or bowtie pasta
  • 1 red bell pepper, diced
  • ½ cup shredded carrots (optional)
  • 2 green onions, sliced thin
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ⅓ cup reserved pineapple juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • Salt & pepper, to taste

Instructions

  1. Cook the pasta according to package instructions in salted water until tender. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, reserved pineapple juice, Dijon mustard, apple cider vinegar, honey, garlic powder, salt & pepper until smooth.
  3. In a large bowl, combine cooled pasta with chicken, pineapple tidbits, bell pepper, green onions, and shredded carrots. Mix well.
  4. Pour the dressing over the mixture and gently toss to coat all ingredients.
  5. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
