  • 2 cups cooked chicken, diced
  • 1 (14 oz) can pineapple tidbits, drained (reserve juice)
  • 8 oz rotini or bowtie pasta
  • 1 red bell pepper, diced
  • ½ cup shredded carrots (optional)
  • 2 green onions, sliced thin
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ⅓ cup reserved pineapple juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • Salt & pepper, to taste

Instructions

  1. Cook pasta in salted water until tender; rinse under cold water and drain thoroughly.
  2. In a bowl, whisk together mayonnaise, sour cream, reserved pineapple juice, Dijon mustard, apple cider vinegar, honey, garlic powder, salt, and pepper until smooth.
  3. In a large mixing bowl, combine cooled pasta with chicken, pineapple tidbits, red bell pepper, green onions, and optional carrots.
  4. Drizzle dressing over the mixture and gently fold to coat all ingredients evenly.
  5. Refrigerate for at least one hour before serving to allow flavors to meld.
